Chicken Salad

A great way to use your leftover chicken, especially in these hot summer days, is to make chicken salad. Chicken salad can be a great snack or lunch and is easy to prepare. Using your leftovers is key to getting the most bang for your buck when buying our beyond organic chicken. This is a great recipe to do just that.

Ingredients:

  • ~4 cups (shredded or chopped) of Bailey Family Farm chicken
  • 1 cup chopped celery
  • 1 cup seedless grapes
  • 1/2 cup dried cranberries (or cherries)
  • 1/2 cup chopped, roasted pecans
  • 1 cup mayonaise
  • salt and pepper to taste

The beauty of this dish is there is no cooking involved, just mix the ingredients together. Don’t like an ingredient, just leave it out. Get creative while you’re at it. It really is that simple.
